Bar Cookies

Peanut Butter Bars:

  • 1 cup all-purpose flour
  • 1/2 c white granulated sugar
  • 1/2 c. firmly packed brown sugar
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. butter or margarine softened
  • 1/3 c. peanut butter
  • 1 egg
  • 1 cup regular oats (uncooked)

Combine the above ingredients in a large mixing bowl; mix well. Press dough into a greased 13 x9x2 inch baking pan. Bake at 350 degrees for 20 minutes. Remove from oven then sprinkle with 1 12oz. bag of semi-sweet chocolate chips. Let stand for 5 minutes or until chips melt, then spread evenly over the surface.

TIP: The best way to cut the bars is when they are still slightly warm. Cut into squares then I cut those squares into triangles!

Drop Cookies

Oatmeal Cookies

  • 2 cups all purpose flour
  • 1 cup brown sugar
  • 1 cup shortening
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp baking soda
  • 1.5 tsp vanilla
  • 2 cups uncooked oats
  • 1/2 cup coconut (optional)
  • 1 cup chopped walnuts (optional)

Preheat oven to 350 degrees. Cream shortening, sugars, and eggs until creamy. Slowly add flour, salt & baking soda. Add vanilla. Stir in oatmeal and the other 2 optional ingredients. Drop by well-rounded teaspoons or cookie scoop onto a lightly greased ( sprayed) cookie sheet. Bake 15 minutes or until lightly brown. Remove from oven immediately. Do not overbake. Store in a tightly sealed container.
